The Best Watermelon-Arugula Salad Eva

The girls at the Bridgehampton house are going nuts for this salad. I cooked dinner last night and we ate well--- not even realizing till the meal was over that it was a serious low-carb meal! The dinner was:

Baked Chicken Marinated Kale w/ almonds (Raia made the recipe on my blog-it's so easy!) aaaaaand Watermelon-Arugula Salad

It's refreshing and yummy and of course EASY. You will need:

Watermelon (cubed) Red Onion chopped Salt+Pepper Mint chopped 2 tblsp Balsamic Vinegar 1-2 tblsp Olive Oil Arugula Feta (optional)

Basically toss all the ingredients together in a bowl and serve!  I like to do equal parts watermelon + arugula.  Everything else is "to taste".   A trick with the chopped red onion that really makes the flavor pop is to take a handful and douse it with salt and balsamic- then squeeeeeze in your palm and drop into the salad.  This makes the flavors of the onion come out. mmmmm.....
