3 Great Ways to Eat Your Pumpkin!

This weekend we had a pumpkin-carving + baking party!  The result is 3 mean-a$$ Jack-o-lanterns & healthy food for days!

Here are our top 4 fave dishes that came from the big orange gourd:

1. Pumpkin Soup: You need a food processor or a good blender for this one.  Sorry guys, I don't have measurements. It's Nona's recipe.  You can find her and her amazing clothes at www.NonaVarnado.com - bug her for the exacts.

Directions:  Add fresh pumpkin, carrots, 1 big onion, ginger, garlic, milk or cream (I used whole mik), salt to taste - blend till smooth then heat!   this soup was so so so delish.  and um, LOW CARB! heh heh

 

2. Pumpkin Bread: We used fresh cranberries which made a HUGE difference.  It was so so so good.  Also, used Brown Rice Flour.  Recipe here

 

3. Stuffed Baked Pumpkin: Our version included ground Turkey, wild rice, apples + raisins. Spiced with Curry, Tumeric, Rosemary.  No Potatoes.    Served with a side of Steamed Kale!

BAKED STUFFED PUMPKIN
1 sm. pumpkin 1 lb. lean hamburger 1 lg. onion 1 c. cooked rice or 2 lg. potatoes boiled & mashed Salt & pepper to taste
Prepare pumpkin. Carve out cap (as you would for a Jack `o Lantern. Remove seeds, leave pulp intact.Prepare stuffing: Saute onion in frying pan, add hamburger; brown and drain. Add rice or mashed potatoes. Stuff pumpkin and replace cap. Bake in 375 degree oven until pumpkin is tender.
