Chopped: Hangry Broke Girls Edition
I'M STARVING. No. I'm HANGRY. I got home from work with no food in sight. So I went into the fridge and salvaged anything I could find...and I literally mean anything. Including a very questionable green pepper. I set Alli to the Chopped Challenge to #feedkym.
What's the most INSANE thing you have ever cooked out of the contents of your fridge?

Vegetarian Quinoa Stir-Fry!
Ingredients:
Peppers (any color)
In this case we had 1 red pepper & 1/2 of an overripe green pepper
Onion
Garlic
Egg whites
cooked quinoa
Pineapple bits (frozen or fresh)
Spicy Dijon mustard
Olive oil
Salt
Cayenne pepper
Lime or lemon
Rice vinegar
Begin by sautéing the onion & peppers in a tbsp of olive oil over med/low heat. Chop the garlic & add to pan. If pineapple is frozen, add it now. If fresh, add before spices.
Once ingredients are sizzling, add quinoa & 2 tbsp of rice vinegar. Once quinoa is hot, add egg whites, dashes of cayenne, salt, & tbsp of mustard and stir together. Cover and let heat for appx 1min.
Remove from heat & serve!
You can also include broccoli and other veggies in this stir-fry. This recipe can also work with whole eggs, and other seasonings such as soy sauce, Braggs Amino acids or Siracha. Enjoy!
